JOB PURPOSE:

Responsible for monitoring and supervising the food production area of the Dietary Department to ensure meals are prepared in a palatable, nutritious and appealing manner consistent with departmental policies and procedures, company standards, and regulatory guidelines. This position is also responsible for recipe development/modification, food purchase and procurement as well as assisting with the preparation of food items. Additional responsibilities include maintaining the Dietary Department in a clean, safe, and sanitary manner in accordance with all governing agencies.

KEY RESPONSIBILITIES:

  1. Creates recipes to assure food is prepared in accordance with the prescribed diet and “taste and demands” of the residents.

  2. Assists with recipe modifications as deemed necessary for enhanced customer satisfaction in accordance with regulatory guidelines.

  3. Purchases food and supplies as needed to adhere to the menus and in accordance with resident preferences and individualized needs.

  4. Cooks and prepares palatable, attractive, nutritionally adequate meals in institutional quantities that are served at proper times and assures that all Dietary partners follow the same standards.

  5. Trains and supervises Dietary partners on proper cooking methods, garnishing, plate presentation and the usage of safe and approved food practices.

  6. Assigns Dietary partners to work all areas of the kitchen, dish room, catering events including advanced preparation as deemed appropriate.

  7. Ensures that food supplies and equipment are used in an efficient and economic manner to prevent waste.

  8. Ensures that partners use personal protective equipment when indicated.

  9. Ensures all Dietary partners handle, store, and dispose of raw food and prepared food in accord with department procedures and in compliance with local health department and company standards.

  10. Provides training for Dietary partners in the areas of food preparation and safe use of equipment.

  11. Follows foodservice standards for infection control at all times to maintain a sanitary food preparation and storage area.

  12. Monitors freezer/refrigerator temperatures in accordance with established procedures and make certain appropriate documentation is maintained.

  13. Conducts inventory, purchase food/supplies and monitor receipt for compliance with organization’s standard of practice and regulatory guidelines.

  14. Maintains the proper storage, preparation, distribution and serving of food under sanitary conditions in accordance with regulatory guidelines.

  15. Supervises tray line service and conducts tray audits to ensure they are served as prescribed and in accordance with regulatory guidelines.

  16. Follows procedures for serving meals to comply with company policies and procedures and regulatory guidelines.

  17. Supervises proper procedures for cleaning all kitchen equipment to include but not limited to carts, tables, counters, ice machine, buckets, blender, mixer, meat slicer, freezer, refrigerator, stove, oven, steamer, garbage disposal, dish machine, coffee/tea maker, and steam table.

  18. Supervises the operation of all major equipment to include but not limited to the dish machine, garbage disposal, blender, mixer, steamer, meat slicer, fryer, steamer, ovens, and coffee/tea maker.

  19. Monitors food production to ensure meals are prepared and served to maintain nutritive value in compliance with regulatory guidelines.

  20. Maintains compliance with budgetary guidelines as outlined by company policies and procedures.

Qualifications

MINIMUM EDUCATION REQUIRED:

High school diploma or equivalent

MINIMUM EXPERIENCE REQUIRED:

One (1) year of institutional food service experience as a cook or chef.

MINIMUM LICENSURE/CERTIFICATION REQUIRED BY LAW:

None

ADDITIONAL QUALIFICATIONS: (Preferred qualifications)

Degree or certificate in food service, culinary arts or related field is preferred. Should have training in cost control, food safety, food procurement, recipe development and food preparation. ServSafe certification preferred
